Strawberry Cream Cake

This is a delicious cake and looks professional as well. This recipe is from the Martha stewart website - www.marthastewart.com - My dad can't have wheat. Everything has to be gluten free. So I used Oat flour instead of all purpose flour. You can change that to your needs.
                                                   Here is the finished cake:
 
 
Pre-heat your oven to 350 f. Butter 2 8- in round cake pans. Mix 3 cups of flour, 4 tsp of baking powder and 1/4 tsp of salt. Set aside. Then cream together 2 sticks of butter and 2 cups of sugar with an electric mixer until light and combined. Then add 4 eggs and 1 tsp of vanilla extract. Beat in the flower mixture alternately with 1/2 cup of milk. Divide the batter into two equal parts and pour each part into a pan. Bake these until you insert a toothpick and it comes out clean.
While this is baking. Hull and slice 1 pound of fresh strawberries. Once your 2 layers are baked and cooled. Turn one of the layers out onto a cake platform or plate (whatever your serving it on). Spread out around 1 cup of greek yogurt and top with strawberry slices. Turn out the second layer onto that. Again, Spread the 1 cup or more (really how much you want) of greek yogurt and top with strawberries.


This was really good. My whole family loved it. I will definately be making it again.

Delicious Vanilla Cookie Recipe!

I found this recipe in the Martha Stewart December 2010 magazine. This recipe has 30 different variations but this specific recipe is for Vanilla cut out cookies. -Yes the cookies are in christmas shapes because I wanted smaller cookies and my other cookie cutters were too big.

Combine 3 cups of flour and 1/8 tsp of salt. Toss that around and set aside. Then in a larger bowl cream together 2 sticks of softened butter and 1 cup of sugar together until light and fluffy. Beat in 1 egg and 2 tsp of vanilla extract. Gradually add the flour miture to the butter mixture until a dough forms. Knead it until it comes together. Then divide the dough into two equal and shape each one into a disk shape. Cover them in plastic wrap and refrigerate them until easier to handle (about 45 minutes).
Roll the dough out and cut into shapes. Bake at 350 f on a cookie sheet until crisp and just a bit browned.
